anyone knows how to make the chatsilim (eggplant) the the pizza stores make?

Is that the plain fried ones, like the ones you put in sabich? If so, it's very simple--slice aubergines, (you may have to cut half lengthwise if it's big), sprinkle salt and leave for 5-10min and rinse. This takes away bitterness. Some people like to peel strips of skin lengthwise but I usually leave the skin on.
In a skillet, heat about 1-2 tablespoon oil till it's really hot, nearly smoking. Add aubergine slices--make sure none are overlapping, sprinkle with a bit more salt, fry both side. You may want to press them down with a spatula so it releases water and cooks quicker.
