I always freeze the following and they freeze beautifully:
Ratatouille (make a HUGE one and divide it up)
Creamed Spinach
Zuchinni -n- tomatoes

Creamed Spinach (Kosher Palette II)
(I usually double this and freeze in plastic containers)
1/2 stick margarine
5 T. flour
1 cup nondairy creamer (I use soy milk)
2 cups chicken broth (I use the kind in the carton, you could use the pareve kind too, or I guess consomme powder mixed with water)
20 oz. frozen spinach, thawed and drained
salt, pepper, garlic powder to taste
Melt marg. in a large saucepan and stir in flour, whisking until blended. Gradually pour in creamer and cook until thickened, whisking constantly. Whisk in soup and cook until mixture begins to thicken. Add spinach, salt, pepper and garlic powder. Simmer over low heat for 5 to 10 minutes.

| Enjoy! One thing I will tell you is to taste it after you season it. Spinach tends to need a lot of salt.

| I don't know if you consider this a real veggie, but I always freeze spinach latkes. They have spinach, carrots, potatoes, onions, eggs. They are so easy to reheat on Yom Tov.

I don't have an exact recipe (it's like making kugel) But here is an approximate recipe.
1 16 oz bag frozen spinach. Defrost partially, and then put in food processor for a few pulses so it's more chopped, but not totally mushy.
Process 2 medium potatoes, 2 medium onions and 2 medium carrots with the S blade. Dont let it get too mushy. You can increase or decrease any of these amounts.
Add maybe 2 eggs, or 4 egg whites. salt, pepper, chopped dill if you want. Any other spices you want...Maybe a little matzo meal.
You can add some olive oil.
You can fry in a nonstick pan with oil or bake in the oven at high temp with a generous amount of oil coating the pans.

Here's a creamed spinach recipe that I tried last night. It's milchig, but delicious!
1 lb. spinach
1/2 cup water
1/2 cup milk
1/2 tsp. salt
3 tbsp. butter
3 oz. Muenster cheese
3 tbsp. flour
Cook spinach in water and milk for 20 minutes. (I used frozen spinach so I let it cook 10 minutes longer.) Add butter, salt and cheese. Sprinkle in flour and stir until thickened. Blend. (I didn't blend it, it was fine.) Serve warm.

omg! I meant regular vegetable turnovers and I don't bake them. I freeze it raw and ready to pop into the oven erev yomtov for fresh turnovers. I serve it with a pepper letcho (Hungarian style stirfry)

| Carrots do NOT freeze well. They get all mushy when defrosted!
