My husband is off wheat for now and I have a big bag of white spelt flour. He's been asking me if I can make a cake or something that he can eat but I don't have any recipes. If you know of any good ones can you post or PM them?

My DD is off wheat now as well for almost a year and I have found that most recipes work really well with spelt flour, no need to make any changes. Just tonight I made the Blintz loaf from the Spice and Spirit cookbook and all my kids loved it.

Try any of your favorite recipes, it should be ok, spelt flour is just a little lighter than normal wheat flour. Muffins also work really well with spelt flour. By the way, the spelt challa recipes on this site are very good, my whole family wants DD's challa!! Good luck!

Thanks, I wasn't sure if I could just use spelt flour instead of wheat. I was going to try my chocolate chip cookie recipe using spelt but I wasn't sure about any of my cake recipes.

If it's white spelt flour, use a little extra - it's a little finer, and works great in chocolate cakes. I used whole spelt flour in my regular banana cake and apple crumble recipe, and they were delicious. Also, found online a recipe for whole spelt chocolate chip cookies which everyone liked - http://www.nunweilersflour.com/trellis/spelt_cookies - I skipped the raisin step.
