Last time I bought a shaytle was about ten years ago and there are so many more brands out there now!!

Shevy, Freeda and Tori wigs all come in large sized caps.

I'm sure that there are others, but these are the ones I know of.

If it's already European hair they ought to be able to customize it for you. Just got a new shaitel from Claire Accuhair (Barefoot Contessa collection), virgin European hair, and they added something like 4 inches in depth to the cap (with all the added hair it needed for the new piece), and redid the hairline for me. (I have a HUGE head) It fits beautifully. They charged for the alterations but the WHOLE thing--alterations, low-lights, cut--came in under $2,000. And they're the NICEST people!!!!

I have a Shaina (about 5-6 hundred dollars). They come in s,m,l,xl. I have a huge head and the xl fit beautifully. I ordered everything via email (I can check the address if you like). I would definitely do it again before investing in one of the more expensive brands. Good luck!
