I'm not sure if this is the right sub-forum but I've got an extra dozen eggs that I'd like to use up. Anyone have any ideas besides for egg salad / deviled eggs? Thanks.

Potato Frittata - S&S
2 cups shredded potatoes
8 scallions, chopped
1 Tbsp dried dill
1/4 cup soy sauce
1/4 cup oil
8 eggs
2 Tbsp water
1 Tbsp oil
scallions or dill, for garnish

In a medium bowl combine potatoes, scallions, dill and soy sauce.
Heat oil in a 10" skillet. Add potato mixture and saute until soft, about 5-7 minutes.
Set aside to cool.
In a large bowl, beat eggs with fork, beating in water. Stir in potato mixture.
Heat 1 Tbsp oil in skillet over high heat for 1 minute. Add egg mixture and lower heat to medium. Cook gently over medium heat, lifting sides of frittata to let uncooked eggs flow underneath. Cook 5-7 minutes until edges are set. (Top will be soft.) Place pan under broiler flame and broil until top is golden and puffed, about 5-7 minutes.
Garnish with dill or scallions.

Vegetable Fittata - S&S
1 zucchini, julienne
8 mushrooms, thinly sliced
1 green pepper, sliced
8 cherry tomatoes, quartered
1/4 cup oil
2 cloves garlic, minced
1 tsp salt
1 tsp lemon juice
1 tsp dried rosemary (or less)
1 tsp dried thyme (or less)
1/2 tsp prepared mustard
8 eggs
1 Tbsp oil

In a medium bowl combine zucchini, mushrooms, green pepper, and cherry tomatoes.
In a cup combine 1/4 cup oil, garlic, salt, lemon juice, rosemary, thyme, and mustard. Pour over vegetables and let marinate 15 minutes. Pour vegetables and marinade into frying pan and saute lightly to evaporate all moisture. Remove from pan and cool. (You can add salt to taste at this point if you'd like.)

Wow thank you so much for taking the time to type those up for me. S&S is Spice and Spirit, right? I'll have to look into getting that cookbook. Thanks again.

My pleasure. Yes, the Spice & Spirit cookbook. It has every basic recipe in there. No pictures but great to have on hand.
