okay, I'm bored of the regular corn, green beans, peas. Any easy ideas for a vegetable side dish?

Mixed Vegetables
1 (16 oz.) bag frozen mixed vegetables (carrots, peas, green beans, lima beans)
olive oil
salt

Pour frozen veggies into a small pan. Drizzle with olive oil. Season with salt to taste. (Be generous - taste the frozen veggies as you go.)
Bake tightly covered until cooked through, about 40 minutes.
(This simple dish comes out really nice when baked this way.)

Zucchini Sticks - flowerpower

Preheat broiler.
Remove seeds from tomatoes using a spoon, and place them on a lightly greased broiler pan.
Combine breadcrumbs, garlic, olive oil, salt and pepper. Sprinkle mixture evenly over each tomato half.
Broil for 5 minutes. Serve immediately.

I usually just use lots of crushed garlic, olive oil and salt. Sometimes use baby carrots.

A very easy way to prepare greenbeans, I've been making this a lot lately:

Also, roasted zucchini is delicious and easy. Slice zucchini, drizzle with olive oil, season with salt & pepper, (& crushed fresh garlic, if you have the time). Spread in a single layer on a cookie sheet & roast at 425 until it is done. (Approx 1/2 hour or more depending on how thin or thick you sliced the zucchini & how well done you like it) You can add other vegetables if you like, like mushrooms, yellow squash, colored peppers.

In Spice it Right there is a roasted zucchini recipe with soy sauce that is good as well.
