Hi I have a frozen pie crust that I want to use before Pesach. I thought I could make some sort of pie with the cooked chicken pieces from chicken soup.
Would like to keep the calories as low as possible, so we can enjoy without feeling guilty.
I have plenty veg (carrots, mushrooms, etc etc)
any ideas anyone?

Just make a regular chicken pot pie filling recipe.
1 small onion
2 Tbsp oil
cut up vegetables
2 Tbsp flour
1 cup chicken stock
1/4 cup soy milk
cut up chicken
salt and pepper to taste
Saute onions and vegetables. Sprinkle in flour and mix. Add stock and soy milk and stir until thickened. Add chicken and season with salt and pepper.
Pour into pie shell. Bake. _________________ Really Awesome Mom!

| you prob will only want to use part of the filling, unless it's a deep dish.

You might also want to make the filling very thick and not liquidy.

You could also top the pie with mashed potatoes/cauliflower (for you low-carb types). That's what I make when I do not want to make another crust (or a two crust pie) from scratch. The potatoes/cauliflower will get crispy if you give it a little spray with oil before cooking. It is yum! _________________ Interested in learning more about homeschooling?

| You can either use 2 pie crusts & put one on top of the filled one or pour the mixture into a 9" casserole dish, defrost the pic crust. Roll it into a ball. Roll it out & put on top & bake.

| bake the bottom crust for a little bit before you pour the mixture in, it'll keep the bottom crust from getting as mushy.

Thanks all for your tips
It was a great success, DH loved it!
I baked the bottom pie crust and partially covered the top (I used the mini crusts for that, but didn't have enough to cover completely).
I brushed with egg.
put in a little chicken soup and a small spoon of mayonaise to give it a creamy texture.
used just onions and mushrooms.

| just posted the same question in another thread but wasnt getting any answers there...I also want to get rid of a pie crust,but we dont really like chicken pot pie...any other ideas?maybe something with ground chicken or meat?

How about a variation on Steak & Mushroom Pie?
Try this recipe as a guideline
