First, take a DEEP breath. It's only a "thing", not life or death. Now, do you have your policy? Check and see what is covered. Do you have a rider on the ring, meaning: do you pay a premium to have it covered "all risk"? Second, check what your deductible is.

If they told you to go to the police, do it. I don't know what the procedure is if it's not assumed stolen, but I guess they know what they are talking about.
I know someone who lost a piece of jewelery and got comped by the insurance company. Afterwards, they found the jewelery, contacted the insurance company and returned the money. How yashar is that?

You have to check the policy and make sure the ring is under a separate all risk rider, and what the rider covers.

I don't know who the people are that you mentioned in your first post, but I am assuming it's your insurance agency.
When you have an insurance claim, you call your agent to file. They then pass it on to the insurance company. At that point, it's more or less out of their hands. The insurance company has to check the claim, assertain that the facts are as stated, check what they owe you, charge you a deductible if applicable etc., and then they send the check to your agent to be forwarded to you. The agency doesn't pay you out of their pocket, they are just the go-between.

LIke Tamiri said, you have to check what your insurance covers. My insurance only covered my jewelry if it was stolen or damaged (e.g., fire) in my apartment. Since I lost it in a restaurant, it wasn't covered. You have to pay extra for it to be covered under any circumstances.

That is what a rider is. And "covered under any circumstances" may also have limitations. For example, it may only cover lost jewelery if the insured was wearing it at the time, or was out of the house, or whatever - the actuaries make sure that the insurance companies always come out ahead. And if it were stolen, for example, they check where the ring was at the time. Some policies specifically note that xyz jewelery must be in xyz type of safe at all times when not being worn by the insured, in order to be covered in case of robbery. You have to check the policy.

They also might only replace it with a like diamond, not with cash.

Step 1: Go to police. Without police report you will get NOTHING.

Step 2: File police report with agent. Agent or insurance company will need to send appraiser or someone to investigate for themselves.

Step 3: Wait.

Step 4: Wait some more. (Don't forget, they'll be off for Pesach.)

Step 5: Follow up to make sure they haven't forgotten about you.

Step 6: You should receive a letter from your AGENT telling you what, if anything, the insurance company will be sending you. If you're lucky, the cheque might even be in the same envelope.

Step 7: Deposit cheque. Go shopping for replacement jewellry. Spend more than you thought you would, so you lose out anyway.

Step 8: Have the jeweller write you an itemized receipt, with a copy of the original certificate for the diamond/stone attached.

Step 9: Send a copy of the receipt & certificate/proof of appraisal to your insurance agent to have the new ring added to your policy. DO NOT SKIP THIS STEP!!!!

Step 10: Receive copy of updated policy from your agent. Review to ensure accuracy, then file away for safekeeping.

BTW, I lost my wedding band around the time we moved (4 years ago). It disappeared down the drain in the laundry room. Because I knew how much it had cost, and I knew what my deductible was, I didn't bother filing a report or claiming it. DH bought me a new one (about a year later) and we worked it into the budget.

Last summer (another almost 2 years later) I opened my laptop case (yes, I'd been using it in the interim) and found...my wedding ring. And the coins from DS#1's pidyon haben.

So now I have 2 wedding rings.
