A challenge for all you creative cooks out there! Very Happy

We have a guest coming for Shabbos who doesn't like to eat fruit for dessert because it upsets his stomach (neither raw nor cooked.) My dh prefers that I not serve mezonos for dessert because of sfaikos regarding brochos. I've made an orange-pineapple custard a few times when he came (made of juice, not fruit) but my kids are getting tired of it. Anyone have an idea for me? It can't be anything too sweet either, because said guest is borderline diabetic. Also, no raw eggs, so ice cream/mousse is out.

What about Jello with whip? They sell jello made with neurosweet, and you can buy the whip seperately in a can and then offer it to each person individually so the guest can have the oppertunity to decline. I've never done this, but I heard that to make jello look more fancy, you can make 2-3 colors, cool it in ice cube containers and then serve it from a big glass bowl.

Homemade buckwheat cake (shehakol or adama, depending on how you hold) with pudding or jello topping.

Regarding the mezonos - we bentch and then eat mezonos desert afterwards, because of the brochos problem.

what about sorbet made with jello?
or bought sorbet plus ice cream & melted choc. layer them in a cupcake foil holder. Looks great & its easy.

Recipe please? Does it call for buckwheat flour or the grain itself?

Not a bad idea at all, CM and pn, but I don't have an air-popper and one of said guest's dietary restrictions is nothing fried.

Right, which is why I don't like to make it. Once we finish bensching, no one's interested in dessert anymore.

How about Bas Hindas chocolate torte? It's got no flour in it and no fruit - only healthy things like oil, chocolate and sugar. Wink It's very rich so a small peice is all that is needed. Personally I would pair it with fruit or (bought) vanilla ice cream, but by itself is fine also. can you buy swedish glace over there?

it's super easy to make. I've made it once or twice and my dh is still sighing wistfully over it. Here's the link:

What about sugar free chocolate pudding made with whip?

look on EPICURIOUS.com for wheat free recipes.

Oddly enough, Betty Crocker mades Gluten Free Pareve Cake and Cookie mixes, which are pretty good. A bit pricey, but good.

No swedish glace here that I know of. Someone mentioned sorbet, which gave me the idea of maybe going with bought sorbet (if it's available in the winter; have never checked because I don't really like sorbet myself and certainly not in the winter.)

pareve cheesecake without a crust. substitute stevia or agave, or use any healthy cheesecake recipe & just substitute toffuti cream cheese

Jane Kinderlehrer has a recipe for a carob tofu pie but only really healthy people will like it.

chocolate custard (pie for everyone else, served in an individual glass for the guest)?
you can make biscuits out of ground nuts (walnuts, almond), just like pesach one
meringue nest (custard and drizzle with choc sauce optional)
creme caramel/flan
Personally I'd be a happy camper just with a few pieces of good quality chocolate...

sorry, here is the recipe:

6 oz chocolate - any kind (I used the bag of Oppenheimer's pareve choc chips which are delicious)
1/2 cup oil, any kind

Melt. If you have a big enough pan, you can mix the cake in there too.

3/4 cup sugar
1/8 tsp salt, any kind
1-2 tsp coffee, optional
3 eggs
1/2 cup cocoa powder

Add the above ingredients, mix thoroughly, and bake in small (8" round) greased pan for half an hour at 350 deg.

(I just quadrupled the recipe and baked it in 2 9 by 13 shallow pans.)

YOU WILL JUST LOVE THIS CAKE !!!!!!


re tofutti cream cheese - I saw some today in a store for over €4 a tub! at that price it would be almost €10 just for one cheesecake.

how about lemon mereinge pie? the spice and spirit recipe is really pretty easy, but it is very sweet.

I found this in a non-kosher cookbook, and make it for pesach-its a big hit:

Dutch macaroons:

2 egg whites
1 cup sugar
1 2/3 cup ground almonds (I use whatever ground nuts I have)
8 oz dark chocolate.

Whisk egg whites till stiff. fold in sugar and nuts.

drop by Tblsp onto parchment paper covered cookie sheet. (rice paper is what they recommend, but its not good for pesach). leave space as cookies will spread. bake 350, 15-20 minutes-till golden. let coll.

Melt choc, dip bottom of cookies into choc. let set. drizzle remaining choc over top of cookies.
