Blueberry Muffin

I JUST made this - and it was sooooo yummy!!!! the whole family LOVED it! ty!! (I used double the amount of duck sauce bc I didnt have an opened apricot jam)

YAY! its one of my faves- blueberry make it on shabbat (friday night- it doesnt reheat well for shabbat lunch especially after sauce is poured off) and wow your guests! I am asked for the recipe every.single.time.

Bake covered or uncovered? And the sauce goes on right away?

bake uncovered. mix everything together in one bowl (potatoes and sauce) then dump into 9x13 pan.

Holy delayed reaction, Batman, but that's a lot of spices. Especially the garlic. What would it be like with just a minimum of garlic for someone who doesn't like garlic (though I suspect it won't go over anyway)?

Has anyone made the duck sauce potatoes using less oil? 1/4 cup seems like an awful lot. Is that much necessary. I would just do duck sauce and a little bit of oil. What is the advantage of adding soy sauce to duck sauce? Meaning do you taste the soy sauce in this recipe??

The soy sauce is necessary- I made them pesach once with no soy sauce and they weren't as good.
Never tried with less oil but I bet it wld be ok.
