If you have jumbo eggs, you can use one; medium eggs, you can use 2. I would mix one egg well, and use half of that (usually about 2 Tbsp.), saving the other half for something else (add to kneidlach, glaze challah, etc.).

| You can use either one white or one yolk, but like greenie, I'd just use the two. You know you're not going to get around to using the half an egg for anything else and will end up throwing it out. Half an egg more won't make any difference in the cookies.

Seriously though, Happy Chick, I doubt you'll go wrong using two unless the only eggs you have are jumbo, in which case one is enough, and the cookies should probably be fine even with 2.

That's what I would do. But then again, I like to follow recipes exactly.
