Someone asked me to make a cake for an event using as few processed ingredients as possible.
Firstly I need a cake. Anyone have a really great spelt cake recipe that taste good to us pple who are used to our white flour cakes. (I never cook with spelt, but the guy really wants a cake that his wife would eat)
I also need a really great frosting recipe that doesn't call for margerine or shortening.
Any advice will be greatly appreciated.

I will ask the guy. and yes I think he wants it pareve. He's ordering it for a sheva bracha, I'm assuming it's a fleishig one, but maybe I should really ask.
The couple is very into organic foods.

I have a great honey banana spelt recipe.
It has oil and quite a bit of honey, but it's good Smile

Can you please post the honey banana spelt recipe? My 15 yr old is now on a wheat free diet and we're struggling to find cakes that will fill her for school. This sound perfect!

I've made this cake with spelt flour instead of white and soymilk with some vinegar, instead of buttermilk.

Spelt banana cake

1 cup mashed bananas
2 eggs
1/3 cup oil
1/2 cup honey

mix in a bowl

1 1/2 cups flour
1 tsp salt
1 tsp baking soda

mix in separate bowl.

Mix half the dry ingredients with the wet ingredients, then add the second half of the dry ingredients, mix again. Add 1/4 cup water, mix one last time.

bake at 325 for 35 minutes or until toothpick comes out clean.

I used to bake everything with spelt instead of wheat, and it came out just fine, I have made the Basic Chocolate Cake from the Spice and Spirit, and many recipes from this site.
For the frosting you can maken a glaze/frosting with melted chocolate and milk or parev milk.

I bake with spelt all the time. I use any regular cake recipe and make it just the same. If the recipe has a lot of liquid, I sometimes use 1/4 cup less, as I think the spelt is a little less absorbant than regular white flout. I make my challa from spelt, all my cakes. I use spelt matza meil, etc. there is really not that much difference. Good luck.

I use buckwheat (kasha) flour all the time instead of wheat. I also don't cook with oil or margarine but use organic applesauce instead.

Here's a nice recipie that's completely organic
250 g buckwheat flour
2 eggs
1 c organic golden sugar
1 package baking powder
1 c applesauce
1 c organic soy milk or rice milk

mix and bake at 350 for 40 minutes
