I was just asked to make fat free - or minimal fat - dips for Shabbos. I came up only with tomato dip. Any other ideas???

what about an eggplant one? Just roasted eggplant, then can add ff or low fat mayo for babaganoush or tomato for the other eggplant dip...

white bean dip? just process a can of white beans with lemon juice, spices and a bit of olive oil.

Roasted Eggplant Garlic Dip
Wrap whole eggplant in silver foil, and a full head of garlic in a separate silver foil. Place them both in an aluminum pan, to avoid a dripping mess.
Bake on high until very soft, about an hour and 10 minutes.
When eggplant has cooled enough to handle, scoop out flesh. Squeeze head of garlic until you get all of the soft creamy garlic. Blend for a few seconds. Season with salt and pepper. Yum.

Do cookielady's garlic dip. It only has a tsp of mayo, and it is delicious!

I have a great fat free tomato dip recipe if you'd like.

2 tomatoes
2 small cloves garlic
1/2 Jalepeno paper (if you like it hot, you can add the other half after you've tasted it)
Blend well. Season with salt and pepper to taste. (I like 1 tsp Kosher salt and just a dash of black pepper. Some people find that too salty. Btw, if you're using table salt, 1 tsp would be way too much.)

Does it get that creamy, orangey color and texture without the oil?

It's not creamy, it's more chunky. The flavor is delicious. And the color depends on the tomatoes you use. It's not so much orange, as red as a tomato.
