Does anyone have the Lebanese Chick Pea Salad recipe from Kosher by Design Lightens Up? I would really appreciate it if someone could post it for me. I will be"h recipricate. Thanks.

nonstick cooking spray
2 medium zucchini, with skin
1 medium red onion, papery skin removed, cut in half
2 (15 oz) cans chick peas, drained, rinsed, patted dry
1/4 cup fresh minced parsley leaves
2 Tb fresh chopped mint leaves
1/4 cup olive oil
5 large cloves fresh garlic, peeled

Dressing:
1/2 cup tahini paste
juice of 1 lemon
1/2 cup water
1 teaspoon low sodium soy sauce
1 tsp balsamic vinegar
1/2 tsp fine sea salt
1/4 tsp freshly ground black pepper

Spray a grill pan with non-stick cooking spray. Place over medium heat. When pan is hot, add the zucchini and onion, placing the onion cut-side-down. Using tongs, rotate the zucchini as it blisters. cook for a total of 15 minutes; parts of the onion and zucchini will blacken. When they are done, slice the zucchini lengthwise, and then again. Cut the zucchini and onion into 1/2 inch pieces and place into a mixing bowl. Add the chick peas, parsley, and mint.

Place the olive oil into a small pt over medium until it shimmers. Add the garlic cloves. Remove from heat and allow the garlic to remain in the hot oil.

Meanwhile, in the bowl of a food processor fitted with the metal blade, place the tahini paste, lemon juice, water, soy sauce, vinegar, salt, and pepper. Pulse 5-6 times. Add the garlic and olive oil it was in. Pulse until a smooth dressing forms.

Drizzle dressing over salad and toss.

Season with salt and pepper as needed.

Now I hope you make it after I typed up this long recipe!! (And hope you enjoy it, it tastes good.)

I hope to make it for Shabbos, so I will definately let you know how we liked it.
