What am I doing wrong? I want to fry my onions and they always come out tasting stewed. Not crisp but soggy and cooked(taste good but not what I am aiming for)
I do not cover it of course but I am doing something else wrong

| Are you aiming for a sauteed onion taste and texture, or a fried onion ring taste and texture, or something else? Tell us what you want them to taste like.

| It doesn't really matter how many onions I use or how much oil(canola) regardless of one onion or 10 onions it uswally has the sauteed soft limpy texture. I want it to be crispy....the only time I ever get it crispy is when I forget about it and it starts to burn. I could be using a saucepan or a frying pan...it is worse when I use a saucepan(I suppose it is the steam???)

| no...I just want the onion to have more body when I add it to farfel or tomato sauce or whatever

You have to make sure your oil is hot enough before adding the onions to the pan. The less hot the oil, the soggier the onions as they absorb more oil. Good Luck! _________________ A day without sunshine is like, you know, night.

Sunshine is right.
Another tip is to heat the frying pan (better not to use a pot) without anything in it. Then once you feel the heat rising from the pan, add the oil. Then, once the oil slides around easily (meaning it's nice and hot) add the onions. This way the oil won't burn as the pan is heating up.
And keep the flame nice and high if you want the onions to be crispy.

I think that that is my problem...my oil is not hot enough
stay tuned...I'll let you know how my liver and onions turn out!!!!!
