So I want to make/serve tacos tonight.

What should I serve to put in it?
Ideas so far:
Beans
Salsa
Guacamole
Corn
Tomatoes
Cheese/ground beef

I know u said tacos...but I love this recipe for Enchiladas and btw it freezes beautifully!! Smile

Vegetable Enchildas - serves 6.

1 dozen small flour tortillas
3-4 cups tomatoe sauce - add 1/2 - 1 t cumin and
1/2 t chili powder to the sauce.
3 T oil
1 cup grated cheddar and/or jack cheese

FIlling:
1 onion minced
1 green pepper, chopped fine
3 stalks celery, chopped fine
1 cup chopped parsley or 1/4 c chopped coriander
2 cups coarsely grated zucchini
2 cups green beans, chopped small (could substitute can of pinto or chili beans here)
corn flour (optional)
1 t salt
dash cumin
dash chili powder
dash garlic

1. saute onion, pepper, celery and parsely in oil. (I also add mushrooms and all sorts of veggies and sometimes parve taco meat!!)
2. add vegetables and cook, covered, until tender.
3. If mixture is very wet, thicken with corn flour.
4. Add 3/4 cup of sauce, a quarter of the cheese and adjust seasonings. Set aside.

Preheat over to 350 degrees

1. Soften tortillas (I stick in microwave for a few seconds).
2. Fill with a generous 1/3 cup of vegetable mixture for eat tortilla. Roll them up and place in a lightly oiled baking dish, seam-side down, rather close together.
3. Cover with remainder of sauce.
4. Sprinke remainder of cheese over the top.
5. Heat in oven until the sauce bubbles.

I made tacos out of fish and I thought they were great, but not everyone here liked them.

If you don't want to use ground beef you could make them more like fajitas. I use leftover beef and chicken (one or both together), throw it in a frying pan with sliced onions, peppers, tomatoes, zuchinni, and a dash of soy sauce, paprika, garlic, or even better italian dressing (homemade or not). Then serve in a tortilla with avocado, tomato, shredded salad, fake sour cream (I don't like but some people do). Beans and rice on the side. If you want my puerto rican yellow rice recipe, let me know. Otherwise you can just throw some diced tomatoes, paprika, cilantro (coriander) into the rice and serve like that.
