Can I make a cholent in a big pan that I leave on the plata through shabbat? I dont have a crockpot at the moment and really want steamy cholent for shabbat lunch!
are there any things that work really well or dont work well like this?

What do you think people did before crock pots? In Israel most people don't use them. There is also a question whether it is permissible to use them for shabbat (don't remember the details of this).
Most people make cholent in a pot and keep it on the plata all night. IMHO it comes out a lot better this way. We seal the meat and fry the onions first in the pot then add the rest of the ingredients, season, add water, bring to a boil and let simmer until its to transfer to the plata. While it's simmering it will loose some liquids so be sure to refill the pot with boiling water. During shabbat you can add boiling water if needed. There are different shitot how to do this, I think the most mehadrin is to remove from the plata with the intent of returning it and then directly pour in from the spout of the מיחם what do you call water boiling things in English, samovar? _________________ גשם, גשם בוא!
