| I just bought a few pounds of blueberries for very cheap (before they get out of season where I live...) and I am looking for ideas of (if possible diet, low fat, fat free etc) recipes. please share your favorite!!

Add them to an apple crumb kugel.

blueberry pie
I love blueberries I buy them on sale at the end of the season and freeze them in the back of my freezer and pull them out whenever I am in the mood. They are great to bake with - but not to eat plain.

Blueberry muffins
this is the best recipe ever!!
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon
Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
Bake for 20 to 25 minutes in the preheated oven, or until done.

| I think most things I make with blueberries were mentioned: pancakes, snmoothies, pies. But I also put some into the oatmeal for my son. He loves them.

| Leaht, we finished ours already! We just couldn't stop nibbling on them. I made some smoothies and we put them in yogurt and oatmeal too. They're really good straight up frozen! I really hope we can get more before the season is over. Please let me know.

I have this really good blueberry muffin recipe- healthy, low fat, no flour at all! (made from oat bran.)

So here it goes...
Oatbran Muffins
• 1 egg
• 2 egg whites
• 1 tsp olive oil
• 1 cup seltzer
• 1/2 cup honey
• 2 cups oat bran
• 2 tsp baking powder
• 1/2 tsp salt (optional)
Combine all wet ingredients. Add dry ingredients until they are just moistended. Add fillings, if desired.
Use an ice cream scooper to fill muffin tin liners 3/4 full.
Bake at 450 got 15-17 minutes, or until golden brown.
Suggested fillings
• Raisins
• Sugar free chocolate chips
• Apple chips
• Cranberries
• Blueberries

Has anyone ever made this? Is it extremely "healthy tasting " iykwim? Or does it taste regular, like would my kids ( and me )eat it?  _________________ Always remember you're unique, just like everyone else.
