I have some leftover latke batter in the fridge, after how long would you say I can still use it?

Depending also if you have egg in it I would say no more then aday- my opinion Exclamation

Not if you add lemon juice, I do and it stays overnight white plus has a more interesting, nice taste Wink

wow, mine starts turning color before I have a chance to get it all in the frying pan, at which point I lose patience and pour the entire thing in to make one big latke, or I guess kugel....

When the potato starts turning colors not worry. I find when I put the batter in the frying pan the latkes turn white again! I don't know why or how this happens it just does. Besides the fact that when you fry latkes they are brown on the outside from being cooked.
