| I think there is a trick with a peice of apple or lemon or something in the microwave - but I can't remember exactly.

| try putting in a ziplock bag or Tupperware container. I buy it in Costco in a zipper sealed bag & it stays fresh for months. If it does go hard, you can put it in the microwave for 20 seconds (or more if u need) or in the oven for a few minutes to soften up.

| I've found that when I buy brown sugar in the bag it doesn't become rock hard, it's only happened to me when it's in the box.

| Just make sure it's in something sealed. Even if I just put a twist tie on the bag it came in & stick it back in the box, it is fine. But ziploc bags are even better.

| If it does get hard, Domino Sugar recommends that you heat it in the microwave in a sealed container/bag with an apple wedge for 35 seconds on high. Then wait 30 seconds before opening the bag. Works excellent.
