Tip abou the extra pot: Use it to mix all ingredients in and then it's not that bad. Don't know why I didn't think of that before!

You definitely can. You can also use pureed pumpkin, butternut squash, or sweet potato.

The original of this recipe is from sarahd, but I've doubled it for a 9x13 pan and changed it a bit.
2.5 cups flour (I do 1/2 ww and 1/2 white)
2 cups shredded carrots
1/2 cup oil (or applesauce)
1 cup juice (I do apple)
3/4 cup sugar (this is 1/2 the sugar the original recipe calls for!)
3 tsp baking powder
2 tsps vanilla
4 eggs
I doubled this today and now we're drowning in carrot muffins. I don't mind, they make a great snack for the kids to bring to school.
