Anyone have any ideas for a lowfat dairy dinner- that does not include FISH?? TIA

There are a lot of great recipes out there using small pieces of chicken cutlets (which is white meat). You can make stir fries or just chicken with a little oil and then broccoli and rice. PM if you like, I have a few such recipes.

roasted veggies with brown rice (and cheese if you want)

polenta with sauteed veggies (we like spinach and garlic or mushrooms and onions)

she said, dairy, chicken is not.

Instead of dairy, there are many lowfat pareve dishes.

Thanks, Fab, but I'mm looking for dairy ideas. Dh and I are both a little sick of chicken at the moment...!

Sorry, didn't notice the word dairy. Well in that case, I make a mean low fat eggplant parm, the recipe of which I already posted somewhere here. Although, it still has cheese (skim) which is somewhat fattening.

low fat spinach mushrooms quiche-

1 box of frozen spinach defrosted and water squeezed out
1 medium onion and 1 box of mushrooms chopped and sauteed in a bit of oil or just cooking spray
8 oz of part skim Mozzarella
1 envelope or about 3 tbsps of onion soup mix
2 whole eggs or 1 whole egg and 1 egg white
splash of low fat milk
4 tbsps bread crumbs

mix all ingrediants together and our into baking dish. Bake at 350 for about 45 minutes.

Low fat eggplant parm. It is not fat free but a lot healthier then the real thing and tastes just as good and takes a lot shorter to make.

peel and slice thin one eggplant

in 8x8 pan layer:
cornflake crumbs
eggplant
pizza sauce
shredded cheese
cornflake crumbs

keep layering until you run out off eggplant (about 3 layers of eggplant).
End with eggplant topped with cornflake crumbs.
Bake covered tightly at 350 for 1 hour and 15 minutes.

Mix 8 oz. tomato sauce 2 tbsp oil 1/3 cup sugar (you can cut down on both if you want). Pour over cooked eggplant. Bake uncovered at 400 for 15 minutes.

Sky, that recipe looks good! It prob has to bake a looooong time in order for the eggplant to get soft. Fab, what's your recipe for eggplant parmesan?
I ended up going to the store and decided on tofu I'm gonna make a stir fry with soy sauce and serve it over brown rice....with split pea soup. hows that?

surprisingly the eggplant does get really soft in the baking times that I posted. It does taste better the longer you bake it but I find that these times are enough.
You can also replace the cornflake crumbs with bread crumbs if you like that better.

I make a delicious semi-dietetic recipe for eggplant parm. The one catch is that it takes up a lot of cookie sheets, so you may have to start earlier to fit two batches in the oven.

2 medium-small sized eggplants
eggs
flavored breadcrumbs
12-16 oz. shredded cheese
marinara sauce

peel and slice eggplant, either way, in length or in circles. Egg and bread them. Spray a few cookie sheets and layer the slices that there should be no open spaces left on the bottom of the sheet, pieces can and should overlap a bit. Spray again on top. Put into a 400 degree oven for about 20-25 minutes, or until lightly brown, NOT CRISPY, just cooked. Wait till slightly cool, so you don't burn your fingers (as I have done multiple times when in a rush). In a 9x13 pan layer one of eggplant, again with no pan showing thru, overlap or tear pieces to make it work. Pour about 1/4 to 1/4 of the jar marinara sauce over the layer and spoon smooth. Then sprinkle a layer or either the cheapest or lowest fat shredded cheese. If I buy two packages of 8 oz. cheese, I try to buy two types like cheddar and mozzarella, or muester etc.. keep layering until you run out of ingredients. Make sure to have the cheese as the top layer. Bake in a 400 degree oven for about 45 min- 1 hour or until the cheese is bubbly and brown.

It is delicious. I used to serve this with homemade french fries and salad, but it is a bit heavy and it is so good, that I would rather just serve more with just salad or something. YUMMMM!!!

Your supper sounds great except I don't like tofu or peas but hearty appetite.

I have another healthy recipe (but with pasta) if you'd like.

I usually try to serve some kind of soup when I'm making dairy. I make big batches of soup and freeze, so that I have an assortment of yummy soups in the freezer. Lentil soup, zuchinni soup, bean soup, split pea soup, carrot dill soup, vegetable soup with sweet potato, red lentil soup are what I currently have in my freezer. Laughing

A few of our standard dairy/ pareve dinners:

- veggie burgers (If you don't keep chalav yisrael Morningstar chick patties are really good!) on whole wheat rolls with lettuce, tomato, pickles, and ketchup or chummus. I serve the veggie burgers with soup, and salad.

- whole wheat pasta with marinara sauce and fat free cottage cheese, along with soup and salad.

- whole wheat pita pizzas with pizza sauce and a light sprinkle of part skim mozarella topped with olives, musrooms, peppers etc, with soup and salad.

- burritos: whole grain wraps with beans, taco sauce, lettuce & tomato, avocado etc. , served with you guessed it...soup & salad

Sky, this recipe looks really good.

Do you salt the eggplant first?

nope. I'm not sure why its not bitter but its really not. Be sure to cook it the full length. Otherwise its not as good.
