I am looking for a dessert to serve at my friends sheva brachos. I know she likes caramel so anything that contins caramel is good. The entire thing doesnt need to be ALL caramel, just a taste is good. And it must be elegant!

pour caramel on top of pareve ice cream on top of some yummy cake ... place some pretty cut berries on the side ... voila ...

If youre willing to do something without caramel here are some ideas:

Ice cream tunnels, basically its a tunnel made out of shortcut pastry filled with icecream and ends dipped in choclate, really nice,

Hot apple cherry pie (single ones in cupcake holders) with a hot custard sauce.

Or simple chocolate cake cut into shapes with a cookie cutter with hot chocolate sauce on top.

if you want to make things more elegant or you are serving tea or coffee afterwards you can make choclate spoons, very easy and elegant.
