I actually have one that I made for my inlaws......it still needs some decoration on top ..... I'll do the cheesecake and you the decorations... do we have a deal?????

crust-
12 choc chip cookies
2 t sugar
1/2 stick butter, melted
crush cookies and combine with melted butter and sugar. Spread on bottom of 9" pan.
filling-1 16 oz whip
8 oz cream cheese
1/2 c sugar
1 t cornstarch
1/4 c warm water
1 tsp vanilla extract
2 egg yolks
1 bar rosmary chocolete
beat topping, set aside. Blend cream cheese and sugar, dissolve corn starch in water and combine all except chocolete. Pour mixture onto crust, melt chocolete and marbelize into ice cream. Freeze.

The first time I made it years ago, I baked it, and couldn't decide why it was still mushy after an hour. Wink

Thanks flower! Does it matter what kind of choc chip cookies I use? Did you try it already?

And btw, how do u marbelize chocolate? have never tried that yet... Sad

just saw your request.....my recipe is the same as flower's... I used a ready pie crust.......

I have a great recipe that makes 2 pie crusts so it's very convenient:

2 Graham pie crusts
1 silver (J&J) cream cheese (softened)
2 egg yolks
½ cup sugar
1 vanilla Sugar
Dissolve one teaspoon corn starch in ¼ cup water.
1 whip
½ Rosemarie milk chocolate (6 squares, any kind)

Instructions:

1. Beat all ingredients together(except for pie crusts)
2. Whip up whip
3. Melt chocolate
4. Add whip to mixture, BY HAND, then add chocolate and keep mixing.
5. Pour into crusts, and freeze well.
