cake:
2 oz. semi-sweet chocolate 1/2 c. oil
2c. flour 1/2 c. water
1 T. baking powder 6 eggs, separated
1 1/2 c. sugar 1/2 t. cream of tartar
filling:
1 1/2 c. dessert whip 4 T. margarine
8 oz. chocolate chips
frosting:
1 c. dessert whip 1 t. sugar
2 T. cocoa
curls:
1 c. chocolate chips 2 T. shortening
Melt chocolate chips and shortening. Pour into lined 1/3 measuring cup. Refrigerate until chocolate mixture hardens. Once very firm, remove from cup and hold in hand. With vegetable peeler, peel chocolate so that curls form.
To shorten preparation time, prepare filling before batter. Microwave all filling ingredients on high for 6 minutes, stirring every 2 minutes. Cover and refrigerate until cool. Beat at high speed until fluffy. This will take at least 10 minutes.
Preheat oven to 350. Melt 2 oz. chocolate on medium setting in microwave for approximately 2 minutes. Mix flour, baking powder, and 1 1/2 cups sugar together. Mix by hand. Add oil, water, yolks, and melted chocolate. Mix by hand until smooth. Beat whites and cream of tartar until stiff. Fold into cake batter.
Grease and line 9" round cake pan with wax paper. Pour 3/4 cup of batter into cake pan. Bake at 350 for 8-10 minutes. Turn pan over on floured towel. Remove wax paper and let cool. Repeat until you have 7 layers. Place 1 cake layer on serving tray. Spread filling over cake. Repeat until all 7 layers are used.
To make frosting: Whip dessert whip until soft peaks form. Add cocoa and sugar. Whip again until it forms soft peaks. Spread frosting. Decorate with chocolate curls.
I never made this, but it's from a school cookbook, so I suppose the woman who gave it, did.
