Now that I've been planning my meals in advance (different thread) and cooking more consistently (kudos to me) I'm getting truly and deeply sick of my routine dinners.

Need dairy dinner ideas that are not mac and cheese, and do not have tuna (I'll vomit).

mushroom quiche, lasagna, baked ziti, homemade pizza, sometimes we have a spread dinner- dressed salad, egg salad, tuna, cream cheese & fresh bread, omelets

gosh how could I have forgotten blintz souffle- that's our favorite. I make tacos too- but ours our fleishig. we used to make them with the soy meat and cheese, but then I started reacting really badly to anything with soy in it- so we stopped.

We do make your own burritos with beans and all the toppings, enchiladas (cheese, veggie, or beans) or enchilada casserole--layer all ingredients and bake, or veggie fajitas. Or cornbread casserole, with beans, rice, taco sauce, veggies you like, and cheese mixed together and put into a pie plate (1 pie plate feeds 3-4 people). Top with prepared cornbread batter and bake on 425 until done!

You can also find lots of Indian recipes with no meat, and paneer cheese is a cinch to make (not available where I am and we like it!). Lentils are good protein--there are lots of nice dal recipes.

How about breakfast for dinner? We do french toast casserole for dinner with any leftover challah, or waffles, pancakes (freeze extras for a quick breakfast!), eggs, even the occasional cereal night.

My kids also like fake hot dogs and pizza, of course!

I make eggplant patties/fritters sometimes. I made them last night.

Eggplant Fritters

Eggplant patties or fritters are made with mashed eggplant, egg, butter, and other ingredients.
INGREDIENTS:

* 1 egg, beaten
* 2 teaspoons baking powder
* 2 tablespoons flour
* 1 medium eggplant, about 1 cup mashed
* dash salt
* dash pepper
* 1 tablespoon butter, soft

PREPARATION:
Peel, slice, and cook eggplant in salt water until tender; drain well and mash. To 1 cup mashed eggplant, add beaten egg, flour, baking powder, salt, pepper, and butter. Blend well. Drop into deep hot fat, about 370°, and fry until brown, or cook like cakes, using just enough oil to keep them from sticking.

I do without butter and season differently. And I did breadcrumbs instead of flour, but it's the same basic idea.

stuffed mushrooms, veggie burgers or schnitzle, olive oil roasted french fries, and salad

Shakshooka - make some tomatoe sauce in a frying pan with onions and peppers, throw in some whole eggs, and cover pan until eggs are cooked.

pancakes (either homemade or from a mix), you can add all kinds of yummy stuff to the mix - cin + sugar (/splenda), pecans + maple syrup, blueberries, strawberries, crushed oreo cookies, etc. I love breakfast for din.

French toast - I dont know lots of people use regular loaves of bread for this but I find its absolutley decadent w/ challah! so we have this alot mon. or tues nite w/ leftover challah from shabbos

Cheese blintzes - the ones from the box (rattners I think) are great, but I can post a homemade recipe if you want. I dont remember the proportions off hand but it calls for like sour cream, cottage cheese, sugar, milk, and OJ, the blintz part is basically the same as pesach noodles.

fettucine alfredo - recipe is either from the kosher palate or kosher by design. SO fast and easy

cereal and milk Smile just make sure to have lots of cereals on hand to satisfy everyone.

"homemade" cream of wheat/farina (ie the type you have to boil up w/ milk and is not instant) - so good and you can add tons of diff things - honey, br sugar, bananas, berries etc, dried fruit, maple syrup, cinnamon, a great cozy winter dinner, actually very filling

then there are the "classics" (which I personally hate and have never made but...) - lasagna, ziti....

you can make a really nice dinner w/ just eggs - have tons of "sides" (/mix-ins) available to choose from - cheese, diff types of sauteed veggies, hot peppers - and then mix it in to make scrambled, or make omelets, have some toast if anyone wants sunny side up, etc...

sides:
milchig noodle kugel

caesar salad w/ parmesean cheese

Quiches are great and there are all sorts of pasta dishes that aren't mac and cheese per se...

I cook the lentils for about 25 minutes (until they're mashable) in water seasoned with salt and pepper.

I mash it lightly so it remains chunky and season as I would chopped meat.

ss, you sure have a sweet tooth! Laughing I would never serve sweet pancakes for supper, except maybe as dessert.

dh's idea of heaven is cheese, potatoe and onion pie. onion and potato sliced thinly and layered with cheese and baked for an hour and a half.

Store bought falafel with chumus, techini, salad and WW pitas is easy and delicious

non fried eggplant parmasean
Layer sliced eggplant with cornflake crums, pizza sauce or ketchup and cheese. Bake 1 hour covered. Uncover and pour ontop tomato sauce mixed with oil and sugar. Bake uncovered 15 minutes. It is delicious and not as unhealthy as frying.
