the scalloped potatoes are so good!!
also you could make potato salad:
boil cut up potatoes till soft
add scallions, shredded carrots, pickles (I leave out the scallions)
add 1/2 cup mayo and equal parts vinegar and sugar (for hal cup mayo I do 1/4 cup of these)

MORAH ORAH POTATOES
potatoes
oil
paprika (a lot, to season)
onion powder (to season)
garlic powder (to season)
black pepper (to season)
salt (to season)
Boil cut up potatoes in salted water. Boil till firm but not soft. (You might like the effect of when they fall apart but it seems to make less). Drain. Toss with oil, paprika, onion powder, your choice of spices. Place on greased cookie sheet. Bake at 450 about 50 -60 minutes. You may want to broil for a minute or two if you want them crunchier.

The scalloped potatoes are really yum!! Here is the recipe from KBD. My sil made this for a family Shabbat and everyone LOVED it.
it kinda looks like this
Scalloped Potatoes
6 tablespoons margarine
1/2 cup flour
2 large onions, chopped
1/2 cup mayonaise
1/2 teaspoon salt
28 ounces chicken stock
9-10 large Idaho potatoes, peeled and slicked into 1/4 inch slices
freshly ground black pepper
paprika
Preheat oven to 350 degrees. Spray a 9 x 13 inch glass or ceramic baking dish with nonstick cooking spray.
In a large pot, melt the margarine over medium-high heat. Add the flour, stirring constantly. Add the onions, mayonaise, salt, and chicken stock. Stir until smooth. Cook until the sauce thickens.
With a ladle, place a layer of the sauce into the bottom of the prepared pan. Spred a layer of overlapping potatoes. Top with a layer of the sauce. Repeat, alternating with layers of potatoes and sauce. There should be a total of three sauce layers and two potato layers, with sauce on top.
Sprinkle the top layer with pepper and paprika.
Bake uncovered for 1 1/2 hours or until golden.
Yields 10-12 servings.

hasselback potatoes - there is a recipe in kbd entertains, I think, but its really simple.
Basically, take a potato, and make slits all the way across, never cutting all the way through till the bottom. Stuff each slit with some thin slices of onion. sprinkle top with salt, pepper, and olive oil, wrap in silver foil, and bake till soft.

| I make a steak and potatoe dish that is heaven and u could probably make it just with the potatoes, I layer sliced potatoes and then smear with mayo and spices, then place the steak on top and smear with mayo and spice it, baked covered for like 2 hours the potatoes come out heavenly...

Hungarian Potato Salad:
4 large Idaho Potatoes
4 hard eggs
2 large sour pickles or 4 mini gherkins
1/c grated carrot for color (optional)
4 tablespoons mayonnaise
Salt & pepper to taste.
Cook the potatoes whole until a fork can pierce through it smoothly. Peel and then cut into small cubes. Cut the hard eggs into small salad size pieces, as well as the pickles. Add mayo, salt, pepper, and carrots. Mix. Yummy when warm, room temperature or cold the next day.
The proportions should be even amounts of potato, egg, pickles, and mayo. _________________ ~-~-~-~-~-~-~-

| Potato latkes, potato kugel (yes, for supper) or you can make potato logs: mash the cooked potatoes and add an egg and flour and spices to form a dough. Roll it into a log and coat it with breadcrumbs. Slice and fry or bake.

| Paprikash potatoes: Start sauteeing some onions, the more the merrier, add sliced potatoes, sprinkle with salt, pepper and plenty of paprika. Add a bit of water, cover and cook on a low flame. You should get delicious potatoes with a lovely gravy. You can add sour cream, if it's for milchigs.
