so I freeze the dough in batches and take out what I need.
but after defrostingand braiding it won't rise nocely liek when I don't freeze thet dough.
so I let it rise in the oven and it rises a bit but I still comes out heaviy after being baked. though not freezer burn.
any reasonwhy they don't rise as nicely??
what should I do??
forgot to mention the rise beautifully the first time.. only after it's frozen do I have this problem...

oh, that's the problem, then. make your dough, let it rise, then immediately pop it into the freezer.
that way the defrosting process is your 2nd rise.

| I don't get it. to make the dough , let the dough rise just once and then freeze?

| I also freeze a lump of dough unrisen. I knead and put in a 2-gallon freezer bag. Take out and defrost (a few hours) and then braid, rise again and bake.
