I made a crockpot supper with beef stew meat, potatoes and carrots. I put it on high at around 12, but I need to leave by 2, can I leave it on low till I get home around 8 tonight? will the meat be fully cooked then?

Each CP is different. How much has it cooked so far?
My cp would be fine left on low, and burn it on high.

When I make cholent I usually leave it on high for about 4 hours then switch it to low and by shabbos morning its fine.
The only time my cholent ever had a burned taste was when I didnt put in a lot of water. I put in water to cover the entire stew.

it should be on high 3-4 hours or low 8 hours for stew meat unless it's cholent. your supper may be cholenty, but it won't burn if you have enough water. as long as you like cholent meat consistency, it'll be fine.
