Here's an amazing purple cabbage salad

I ate this at a Sheva Brachos recently and had to call up and get the recipe. It was too delicious!

1 bag of shredded purple cabbage (I guess 1 medium cabbage)
3-4 chopped scallions
1/3 cup pine nuts (I use candied pecans instead)
3 carrots julienned (not grated)
1 can mandarin oranges
handful of craisins

Dressing:
4 Tbls brown sugar
1/2 tsp pepper
1/4 tsp salt
4 Tbs vinegar
1 Tbs juice from the mandarin oranges
1/2 cup oil
1 tsp chicken soup mix (weird, I know)
garlic powder

This is a VERY expensive salad but it's soooooooo good!

I have made that recipe, too, from the KBD, and I love it.

my family must be whacked.

the only way we eat purple cabbage is raw, in a salad.

what type of vinegar and oil did you use?

What do you think of skipping the scallions in this recipe (I don't use them because of difficulty checking them for bugs)?

Can they just be left out or can some chopped onion be substituted?

I made this salad recently for an engagment party and it was a huge hit! It's so pretty and colorful so great for having a party or entertaining, its delicious and since its purple cabbage and not lettuce, it doesn't get soggy so you can leave it out for a loong time. Its really great, by the way, I shredded the carrots and it was fine, I don't know why it says you have to have julienned carrots. I'd imagine you can leave out the chicken soup mix cuz there are so many other flavors but I can't say for sure cuz I made with the chicken soup mix. Ok now I'm in the mood to make it again Smile
