I've eaten delicious carrot muffins many times in restaurants but never found a GOOD and EASY recipe to make it. Anyone have a yummy recipe they already tried? Not dairy
hurry...I wana make it tonight!

I think I got it from the someone on the list here -
Ingredients:
4 eggs
1 3/4 cups sugar
1 cup oil
2/3 of a bag of carrots (pre-bagged carrots) grated
1/4 cup orange juice
1 teaspoon cinnamon
2 teaspoons baking powder
2 1/2 cups flour
2/3 cup chopped walnuts
glaze
1/2 cup confectioners sugar
8 oz. whipped cream cheese (tofutti cream cheese if you want it pareve.)
Method:
beat eggs together in a big bowl.
add sugar and mix with a handmixer
now add the rest of the ingredients
mix all ingredients together and pour into a greased bundt pan.
bake on 350 degrees and watch it until its ready.
mix together glaze ingredients and pour on top of cake.

My sil makes it with baby jars of carrots, and its yum. Dont know the exact recipe though. sorry
