Cheap vegetable meals

We are on a tight budget for the next couple months and I am trying to think of meals that are inexpensive. I think vegetables are the cheapest source of food - any suggestions of filling meals (I.e. not salad) that I can make with mostly veggies? I have some chicken and fish in the freezer as well... Question

Stir fry with rice or noodles. You can use almost any vegetables, and if you like add chicken, or nuts or tofu.

Vegetable omelettes or fritatta.

quiche.

stuffed peppers.

You will need protein as well - lentils and beans are probably the cheapest way of getting protein.
