Spelt roll recipe-anyone??

I need a great spelt roll recipe, I would prefer sugar free but either way is good.
ANyone have something they like?

Yes, this one works very, very well as it fluffs up beautifully due to the long yeast proofing time.

30 Minute Spelt Rolls That Are Light & Airy!

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: 12 rolls

Serving Size: 1 roll

Ingredients

1 cup plus 2 tbsp warm water
1/3 cup melted coconut oil (or olive oil)
2 tsp dry yeast
1/4 cup sucanat (or sugar)
1 1/2 tsp salt
1 large egg
3 1/2 cup spelt flour, sprouted spelt flour or white spelt flour (any of these would work)


Instructions

Preheat oven to 400 F.
Combine water, oil, yeast and sugar. Mix and allow to rest for 15 minutes.
Mix in the salt, egg and flour. Knead until dough is smooth and soft (about 2 minutes in mixer).
Form dough into 12 balls and place into a greased 9"x13" pan and allow to rest for 10 minutes.
Bake for 10 minutes or until tops are golden brown.

H.Y. Thanks for the recipe. I am going to try it today. What is sucanat? Would you use Silan instead or will the taste be to pronounced?

Sucanat is in granulated form and retains the molasses from the sugar cane, which is better than refined sugar. As Silan is not the same consistency at all in a syrup form, I don't know how it could be substituted easily; I think you would need to play around with the recipe.

I got a delicious spelt dough recipe that I braid into challos and shape into rolls. Here is how I modified it to my taste.

6 lb spelt flour
3T yeast dissolved in 2 cups water
3t kosher salt
3 eggs
1c oil
1c honey
3T guar gum dissolved in 2 cups water
The recipe calls for 4-6 cups of water in total depending on the consistency of the dough ( the more water the harder to braid cause the strands will stick and the braids will disappear when rising)
Hide salt. add ingredients. Knead 15 min on high. Rise 20 min. Knead one minute. rise 45-60 min ( untill doubled) braid egg rise again 20 min egg and sesame seeds bake on 350

Easy Spelt Rolls Recipe
In a bowl mix 3.5 cups Spelt Flour with 3.5 t powder and 1/2 t salt
In another bowl mix 1.5-2 cups water with 3.5 T honey and 1.5 T oil.
Mix both together. spoon onto cookies sheet bake at 350 for half hr.

H.Y. I made your spelt roll recipe today. I did not taste it yet but my son told me it was delicious! THank you! It was a very sticky wet dough and hard to even form rolls with it. Is that true for you too, or is it because I used 70% spelt flour?

They are sometimes sticky (I think a lot depends on the humidity) but I was still able to form rolls with them easily enough even if the dough was on the sticky side....perhaps it was because it was not 100% spelt, I don't know...I never tried it like that. I'm glad your son enjoyed them though!
