I can make any of the following for our family of 6 for less than $5

Fried rice

Rice and beans (we like Spanish, Mediterranean and Asian versions)

Eggs and bread (scrambled and toast, French Toast, omelet sandwich, etc.)

Tofu Lo Mein

Spanish omelet

Focacia

Fake minestrone soup (beans instead of meat) with fresh bread

onion soup (no cheese) with croutons

Tuna quiche (I think I got the recipe from imamother but I can't find the thread now)

chicken hot dogs and mashed potatoes

I could probably think of more things, these are my go to-s that I know my family likes

most carb based meals are my cheapest (noodles/lasagna, pizza, rice/potatoes)
protein main dish costs more - meat, fish chicken

I once heard that low income people are overweight since they fill up on lots of cheap carbs.!

Rice and beans. Cheapest when you buy in bulk. I buy 10lb bags of rice and 5lb bags of dried beans.

Meat: dishes using chopped meat-this is cheaper than other meats and easier to stretch as it's usually served with something else such as
sloppy joes with pitas
meatballs and spaghetti

My cheapest really yummy and home cooked meal is huevos rancheros.

--Fry eggs (sunny side up or scrambled)
--Heat a can of beans, add a half cup of salsa and a few squirts of lime juice.
--Place both on tortilla. Sprinkle with shredded cheese.
--Garnish with paprika and parsley.

Gorgeous, yummy, nutritious, filling, fast, and cheap!
