I know there are different minhagim with mixing fish and dairy.
For those that avoid eating fish with dairy TOGETHER, would you reuse oil that was used to fry fish and fry cheese latkes in it?
Please respond only if your answer is relevant to the question at hand.

We don't mix fish and dairy (much to my sadness at times), my husband says 'no way'
We are no rabbis though so I'd be interested to hear what others say

My husband doesn't mix fish with dairy - and I would definitely not reuse oil previously used to fry fish to then fry cheese products.

Forgetting about the mixing part, I wouldn't do it because it would give the cheese latkes a fishy taste --yuch.
