Whereas I usually lay out my eggplants and salt/sweat/rise/dry my eggplants before cooking this week I used a recipe that called for me that process to be done in a colander. Well, it didn't take out the bitterness and now I've already cooked the eggplant and it's terribly bitter.
Any ideas how to salvage them at this point?
