I made this once and plan on making again for shabbos as a side dish.

Acorn Squash baked with cinnamon and honey. Its pretty healthy and seasonal. Walmart had them for about .50/lb where I live.

Honey- Baked Acorn Squash

1 acorn squash, about 1 1/2 pounds
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 pinch of freshly ground black pepper
1 teaspoon olive oil
1 tablespoon honey

Directions

Preheat the oven to 350°F.
Cut the squash in half and scoop out the seeds. Cut each half in half again and place in a 13" x 9" baking dish.
Sprinkle the cinnamon, salt, and pepper over each squash quarter. Drizzle with the oil and then the honey.
Bake for 1 hour 15 minutes to 1 hour 30 minutes, until the squash is lightly golden and tender when pierced with a fork.

Things I've made in the past few weeks that may be not a classic shabbos dish:
sweet n sour salmon
roasted carrots
popcorn cauliflower
sauteed green beans with onions
baked rice with "vermicelli"
basmati rice with turmeric, onion, toasted almonds, cinnamon
basmati rice with cumin
zucchini kugel
cranberry pineapple kugel
blueberry apple kugel

put it in the microwave whole for a minute. I do this with butternut squash for 2 min cuz its bigger... I would assume it would work the same way. it makes the peel a bit softer.... but it doesnt cook the flesh at all so it can still be roasted...
