Hey!

DH is on a low carb diet, it's going great. BUT It's only week two and I'm already out of ideas. On a low carb diet? Can you share your menus so we can get ideas & recipes from each other Smile

Week one:
M - Vegetable soup & Asian Chicken Salad (imamother.com)
T - Roasted vegetables, cauliflower & tilapia
W - Beef, mushroom soup & Salad
Th - Shabbos chicken soup & Broccoli quiche

Week two:
S - Vegetable soup with chicken balls
M - Tuna pie, green beans & avocado tomato salad

Last night I made a vegetarian chilli (with beans, zucchini, carrots, tomatoes) and served it on top of spaghetti squash. Spaghetti squash is a great pasta substitute.

ramom- can I have recipe for garlicky roasted veggies, stuffed omlets and butternut squash fries?

I find soups to be the best as really filling.. tonight I made a meat soup- First sautee a lot of onions and garlic then zuchinni,sweet potato, carrots all cubed up.. small cubes of meat, salt, pepper, paprika and water and cook for about 4 hours.. It is really filling and use as a full supper.

Roasted garlic zuchinni soup (by cookbook)
Roasted garlic sweet potato soup or pumpkin soup

Tuna stir fry (basically sauteed onoins, pepper, mushrooms. Add tuna and mix for a few min. add equal amount of soy sauce and sugar (a bit)

Salmon- teryaki
grilled chicken cutlet salad

garlic roasted vegetables
cut your favorite vegetables into chunks and add 1/2 a head crushed garlic. drizzle with olive oil and season generously with salt. arrange on a cookie sheet and roast uncovered at 400 degrees for 40 minutes.

stuffed omelettes
4 eggs, lightly beaten
1/4 cup milk or water
1/2 tsp salt
pinch pepper

Mix eggs, milk, salt and pepper in a medium bowl.
Heat a greased non-stick frying pan. Pour half of the egg mixture into the hot pan. As edges set, carefully pushed cooked portions at edges toward center so uncooked portions flow to bottom. Tilt as necessary so uncooked eggs can set.
While top is still moist, fill with sauteed vegetables and/or cheese. With spatula, fold in half or roll. Turn out onto plate.
Repeat with second half of egg mixture to make second omelette.

Chicken “Matzah” Balls (fluffiest when eaten fresh)
• 1/2 small zucchini, peeled and cut into chunks (or 3 oz. reserved zucchini from noodle recipe)
• 1/2 small onion, peeled and cut into chunks
• 3/4 teaspoon kosher salt
• 1 pinch coarse black pepper
• 1 large egg
• 1/2 pound ground chicken breast

Combine the zucchini and onion chunks, salt, pepper and egg in the bowl of a food processer fitted with the knife blade. Process until smooth. Transfer to a medium bowl.
Add the ground chicken to the bowl and mix until well combined and sticky. Place the batter into the freezer for 15 minutes to make it easier to work with.
Fill a 4-quart pot 2/3 up with water. Salt the water and bring to a boil over high heat.
Working quickly with wet hands, form small balls and drop into the bubbling water.
Simmer for 20 minutes.

I realized after posting the list of recipes I want that it's quite a tall order. Don't feel obligated.
I would like to know more about how yo.make spaghetti squash. Does it.really taste similar to pasta?

It tastes like squash. Looks like pasta. If you dress it well it is very enjoyable.
Cut the spaghetti squash in half lengthwise. Scoop out the seeds. Rub cut ends with olive oil. Place, cut side down, on cookie sheet and bake for about 1 hour. When cool enough to handle, use the tines of a fork to scrape the spaghetti squash strands into a bowl.

ra_mom, you're the best! I got so used to pasta, potatoes, orzo as the side, it's hard to think of vegetable.

Thursday, I ended up just sautéing whatever vegetables I had in the house with chicken strips & a salad.

Week Three:
S - zucchini asparagus soup, cauliflower popcorn & Pan-Seared Tilapia
M - Falafel chicken, Israeli salad & Split pea soup
T - Tuna patties, coated in sesame seeds, avocado dressing salad with baked carrot chips (DH hates cheese) & leftover split pea soup
W - Shepered pie (using cauliflower instead of potatoes) with tri color vegetable fries
TH - Shabbos chicken soup & ?

When you have a chance, can I have the recipe for
zucchini "spaghetti" salad
tri color vegetable fries
cauliflower "rice"
radish salad
roasted asparagus
mediterranean meatballs over avocado relish - what is this?

So True! I always have soup in the freezer. If I had no time to make supper, I take one out and add cut of chicken.

What do you serve with Tuna stir fry, or is it filling enough along?

these meatballs are awesome made with ground veal. very good with dark ground turkey or meat.
I sub the fresh mint for 1 tsp dried, use just a dash of cinnamon and cayenne, and add 2 crushed garlic cloves.

cut club steak into cubes, remove fat, place in ziploc along with splash of red wine vinegar, olive oil, crushed garli and salt. marinate in refrigerator 24-48 hours. thread on skewers. broil

chicken fajitas
saute 2 thinly sliced onions, add 2 thinly sliced different colored peppers along with half of fajita seasoning. reserve on place. saute chicken strips in remaining seasoning. combine, mix and serve.
