So we have leftover chicken again and I am not in the mood to just reheat it.. aside from chicken salad, any other suggestions (its dark meat).

Just a few ideas off the top of my head:
-Cut up and mix with a bit of sweet corn and mayo, serve on a hot jacket potato
-Use the leftover chicken to make chicken pie (my dH loves this) I use ready made puff pastry but you can make your own if you don't have any
-Make chicken wraps or chicken in pitta. If you have a george foreman you can put the chicken and desired veg (eg fried onions and peppers) in the pitta with some sauce (ketchup, BBQ, humous etc) and grill, comes out toasted and delicious
- Serve with pasta and tomato/pesto sauce or stir fried veg and noodles

Please explain what is wrong with warming up leftovers.
I always try to cook more, so I have enough for another meal.
Is there something I don't know?
Vegetables, I know. Most don't overnight well.
But dark chicken?

Nothing is wrong with leftover chicken- we usually do it all the time- just in one of those moods where I need something different-

So rather than drive yourself crazy, how about you make something different, and keep the leftovers for tomorrow? Or freeze for one of those days when you really need a break.

We usually are fine with leftovers, but whenever those moods come along, I usually just make a new sauce or glaze and it remakes the chicken. obviously, this will only work for chicken with spices or breaded chicken.

You can saute an onion add potatoes, salt, pepper, paprika and a little water. Cook covered till soft, add chicken and cook another 5 min.

Saute some sliced onion, shred the chicken and add it to the pan, add some barbecue sauce and heat it through. Put it in soft sandwich rolls or lafah to eat!

spread some sort of mayo dressing, then add on top: sautéed onions, lettuce, and the chicken. yum
