Freezable sides- no kugels

I am due any day and am trying to make stuff for rosh hashana that I can freeze. I have very limited energy so nothing with too many steps. I am also a big vegetable lover. any ideas will be helpful, I am totally drawing a blank.

You can make muffins, they freeze great. Zucchini, carrot, apple, banana... etc.

You can also make pureed veggie soups, those freeze well.

apple crisp/ crumble/ cobbler freezes perfectly raw. just put in the oven when u need it! B'shaa tova!

There is a recipe in Cooking with Color for a vegatable kugel with shibolim ww matza ball mix that I find is very much vegetable-like as opposed to heavy kugel. It freezes beautifully.

I would empty a bag of broccoli add some salt oil and garlic and throw on the hotplate. by the time you get to the meal it'll be ready.
same w/ green beans.
or cauliflower w/ some spices.

You can freeze pastrami orzo/lo mein and the texture will be ok when you're ready to use it? Do you defrost it first or put it in the oven frozen?

I wrap it well and then freeze it. I keep my oven on on like 220 so warm it up before serving and it tastes fresh.

We love broccoli as apposed to broccoli kugel and snap peas too - just need to heat up (dont ruin it with too much water).

deli rolls

noodles and cabbage

Bake chicken and cut up potatoes /sweet potatoes - it freezes well.

If you live me I would send you a meal or two!!

hearts of palm and baby corn salad - stays fresh for a week in the fridge (it has vinegar)

roasted vegetables:
eggplant, zuccinni, coloured pepper, some tomatoes, olive or other oil (just a little to moisten), red or white onion optional, fresh garlic optional.
cut up in whatever size chunks you want, toss with the oil & roast in 9 x 13 pans - as much or as little as you like - freezes very nicely.

roasted peppers - cut coloured peppers in half, clean, put on cookie sheet/ roasting pan with parchment paper (to keep clean) - broil till turns black.
put whole tray in paper bag to steam or in covered bowl,
and then peel.
freezes beautifully, needs no oil, makes lots of liquid,
can be eaten as is, mixed with other side dishes.
