Have 'you' ever used yeast left out overnight?? Are you talking from experience?!

Yes. The only problem I ever experienced with old yeast is that the challos didn't rise well. Prove the yeast before using it (put it in warm water with some sugar and wait 15 min), and if it appears active you have nothing to worry about.
