Friday night Potato recipe?

I need potato recipe for Friday night.
No kugel.
Any potato recipe which doesn't take to much work.

Saute sliced fresh mushrooms and onions. Remove from heat.

Add tsp. dried rosemary.

Add 1 tsp kosher salt.

Add 1/4 tsp. black pepper.

Add 1/3 c. olive oil.

Toss with mini red potatoes, peel on.

Bake covered in oven at 375 f. for 1 hour or until soft.

our new favorite is smashed potatoes
I make half according to this recipe:

smashed potatoes

and half with just olive oin and salt so the more picky kids eat it.

Oven Roasted Potatoes

Peel and cut potatoes into large pieces (if using thin skinned potatoes like new red or yukon gold, skip peeling) and place in boiling water for 15 min. Drain.

Toss with oil in a pan, spreading pieces in a single layer. Add garlic powder, salt, and paprika.Cook in 450 oven for 30 min, turn and add more spices, then leave until starting to brown (about another 30 min.)

Everyone loves these, so make extra!

I make this, but also dice an onion and spread it in the pan. It comes out sweet and delicious!

I find that potatoes come out delicious when baked with the chicken.
I make a standard chicken recipe- clean chicken, spice with salt, garlic powder, onion powder and paprika. Place peeled and cubed raw potatoes (both sweet and white work well) in between chicken pieces. Pour a can of whole or jellied cranberries on top, covering all. Bake covered for around two hours and uncover the last twenty minutes.

Twice baked potatoes

Roasted potatoes and shallots (I do this with mini potatoes and toss with olive oil, mustard, salt, pepper, onion powder and garlic powder.)

Boiled baby potatoes

Wash and scrub 1kg miniture/baby/finger potatoes. Boil whole in lightly salted water till done (not mushy).
Drain, sprinkle with chopped parsley and/or mint, 1tbsp of olive oil, salt and pepper.
Simple, fresh and elegant.

wash small red potatoes, cut in quarters, add some onions, garlic, oil, salt, pepper & garlic powder. cover, bake 350 for apprx 2 hrs. - yum.
