Julienne peeler

I just bought a julienne peeler and would love to use for shabbos anyone have any recipes that look elegant that use the peeler

Julliene peel zucchini and carrots add to a frying pan with a little oil and some salt mix tillsoft

These are things I use it for:

Oven steamed Julienne Vegetables (side dish or garnish)
8 servings
I'll sometimes make 1, 2, or 3 vegetables, keep separate and then use to garnish a plate - like fish. Or it is good as a side dish. I like keeping the colors separate when serving.

2 large carrots
2 medium zucchini, washed and unpeeled
2 medium yellow zucchini, washed and unpeeled
2 T olive oil
1 T kosher salt
1/4 cup boiling water
1 lemon (optional)

Preheat oven to 400
Julienne vegetables with peeler. Place in roasting pan. Toss with olive oil and salt. Pour boiling water over veggies and cover tightly.
Bake 30 minutes. Stir. If ran bake uncovered another 5 - 10 minutes.

Squeeze lemon over veggies (optional)

Zucchini Spaghetti salad (maybe from Joy of Kosher Magazine)

2 medium zucchini (1 1/4 lbs total)
2 Tbsp olive oil, divided
2 - 3 mini onions, slivered into thin rings
1 small garlic clove, very thinly sliced
1 cup grape tomatoes (5 oz) halved
2 cups mushrooms (5 oz) thinly sliced
kosher salt and pepper

Peel zucchini and trim ends. Julienne zucchini until the center seeds.
Lay out zucchini spaghetti in one even layer over doubled up paper towel. Let dry 4 hours.
Heat 1 Tbsp oil in frying pan. cook zucchini until just heated, about 2 minutes. remove and set aside.
In the same pan add the rest of the oil and saute the onion and garlic and translucent about 2 minutes. Add mushrooms saute another 3 minutes. add grape tomatoes for 1 minute. toss with salt and pepper. Season zucchini with salt. Add rest of veggies. Server room temperature.

Spicy Light Chicken Lo Mein (from the Ami Magazine)
2 servings
I serve this a more of a weekday supper - I know you didn't ask for that - but it is good

4 oz chicken breast cut very thin
1 tsp honey
1 medium honey, thinly sliced
1/2 cup bell peppers or more sliced
2 cups julienne zucchini and yellow squash
2 tbsp soy sauce
salt and pepper

spice mix:
1/2 tsp salt
1/4 tsp paprika
dash black pepper
1/2 tsp garlic powder
1/4 tsp parsley flakes

mix spice mix and rub onto chicken
Spray pan with pam. add chicken and cook until cooked through 4-6 minutes. Add honey last 1 minute before removing from pan.
wipe out pan and Heat more spray in pan. Add onion and saute over low heat about 5 minutes add pepper and cook additional 2 minutes.
Add squash and cook until soft. Add soy sauce and season with salt and pepper. Add chicken strips.

carrot salad. Don't have exact measurements.

1 bag carrots cut julienne
freshly squeezed lemon
olive oil
1 frozen garlic cube (or fresh clove crushed)
1 frozen cilantro cube (or fresh equivilent)

(I don't like carrot salad from shredded carrots, but julienne is yum!)
