Mini Peppers

looking for ideas for dinner using mini peppers. Nothing dairy or that uses tomatoes sauce.

Any ideas? TIA Smile

Spray with pam or oil and sprinkle garlic salt. Bake for about 30 min on 350 turning them over once.

I can't believe it! I was just going to start a mini pepper thread because someone just gave me a big bag of them and I've never served them/ cooked with them before.

My main question is, do you eat the whole thing, seeds, stem and all? TIA Smile

first off they are as good as popcorn - if not better ...

you can stuff them with tuna salad

or melt cheese inside

or just slice & dice in any food you might put peppers in ... stir fry or what have you

Greenfire, when you eat them whole like popcorn, do you eat the whole thing? Seeds, stem, everything? TIA for your enlightening response to this question that's been haunting me for the last three days since I was given this beautiful bag of peppers... Smile

I bite the stem off with some of the pepper ever so gently so the seeds come along ... and then spit that out & munch on the rest

alternatively you bite from the bottom till the stem is left with the seeds ... but the seeds are natural so won't be a bother if you eat any of them

I don't like seeds in my food

unless we're referring to hot peppers I.e. jalapeño habañero esta muy caliente en la comida

I don't eat the stems or seeds. A few seeds sneak in with some bites, but I don't think they're meant to be eaten.

Remove stem and seeds but keep whole. Stuff with minced meat (beef, lamb or mix of both) mixed with chopped onion, parsley, cinnamon or allspice, rice (soak first), paprika and salt. You can add currants if you want. Don't stuff fully if using rice lest it explode. Either bake in a casserole or stew in a pot (for gravy you can use more sautéed onion, tomato paste, lemon juice, soup powder, wine, OJ). Can be served at room temp or hot.
