Eggplant parmesan

Easiest eggplant Parmesan ever:

Layer in 8x8 pan (4 servings):
cornflake crumbs
sliced, peeled eggplant
cornflake crumbs
pizza sauce
shredded mazzerlla cheese

Repeat the above 2 - 3 times until you run out of eggplant.

finish with eggplant topped with cornflake crumbs.

Baked covered at 375 for 1 hour 15 minutes.

Mix 8 oz tomato sauce
2 tbs. oil
1/3 cup. sugar

pour on top

Baked uncovered for 20 minutes.

It is easy, yummy, and does not have as much oil.

I do the exact same thing, but I skip the salting, sitting and drying. If you use a small, firm, not overgrown eggplant, it should be fine. Also, I bake, instead of deep-frying the slices.

Does anyone have an Israeli-kitchen friendly recipe?

I have tomato puree and overripe tomatoes and Yerushalayim cheese. No tomato sauce, no marinara sauce (never heard of that) and no cornflakes please.

you can use watered down tomato paste -- its about 2 shekels in most supermarkets. If you water it down (good trick in general, you get more for your money) and add spices than its just like regular tomato sauce.

use bread crumbs (coat the eggplant with egg and bread crumbs). Combine "pizza cheese" with gvina tfatit (sold in round containers -- crumbles kind of like feta, but its cheaper).

there you have it.

chop up the tomatoes (use a food processor or blender if you have one) and follow my recipe in the other thread, using those instead of canned.

use bread crumbs or matza meal to coat the eggplant. and whatever cheese you have should work if it melts. You might have to calll it eggplant yerushalmi though. Wink

Have others tried this recipe where you dont have to bread each eggplant slice? This sounds easy.

Am I the only one who uses the Bgan frozen breaded eggplant cutlets? Its SO easy and then it's literally a 2 min supper!! Made it last night and was delicious

How many packages of Bgan frozen breaded eggplant cutlets do you need to fill up a 9X13 tin?

Ready jar marinara or vodka sauce
Any shredded cheese
One or two layers.
