My husband has an I Phone with Verizon. We may need to check email and make calls to the US with it while in Israel. Does anyone have experience with this, or suggestions for us?

Rent a phone. Your phone will probably be on roaming and you can end up with a huge bill.

Take the SIM out, and use it in areas with wi-fi as a laptop-type computer.

you don't need to take out the sim. And you only need to unlock it if you want to put in an israeli sim. Just turn off data roaming. Check your plan. when I travelled to the states recently with my european iphone it wasn't that expensive to receive texts so I turned off data roaming and was able to receive texts. (I don't generally get a lot of texts though) obviously I did not answer calls.

Whenever there was wifi I could use skype, whatsapp etc. (I think you can use skype to call regular landlines as well as computers or smartphones for an extra charge so check out that option)
