I love this topic! I'm newly married, work full time, and I'm having a hard time coming up with quick, easy, supper ideas.

Aussie, can you post a recipe for rice soup? It sounds interesting.....

I have a rough schedule for the week. Out of 5 nights I try to do a meat night, a dairy night and a pareve night. That leaves two based on whatever I feel like doing or spending. I think having a basic structure to the week helps me be organized and not feel tempted to just order a pizza but its not eating the same foods each week.

Also the rotisserie chicken from the grocery store has become my new best friend. If I buy a fresh one its $10.00 which is pretty cheap per person. (It is me, DH, DS and often a BIL but not always. It can be anywhere from $2.50 to 3.00 a person) I have shredded it and made bbq chicken sandwiches, tacos, pasta and we just eat it the way it is a lot too. It takes the pressure off a little bit but its about half the price of ordering a pizza.

I have found with a 20 month old who really needs to be watched is that the crockpot or other make ahead meals help so much. I often use DS's nap to prepare dinner.

I use quick cooking crockpot recipes such as mac and cheese, risotto, enchiladas, chili, and different soups. U I assemble them when he naps and when DH comes home dinner is either ready or needs to be put in the oven.

Thx loads for all the cooking info and tips. I feel full already Wink (problem is that my hubby doesn't Wink )

Quick question - how do you make the roasted beets? I love beets and would love some variety on how to cook/bake them... thanks!

I peel and cut them up and toss with olive oil. Spread them on a cookie sheet. Bake in oven preheated at 400 for 45 minutes. Sprinkle with kosher salt. So good!

For more of a chip like product, scrub beets, and slice them really thin. Spreak of cookie sheet lined with parchment paper and bake in oven preheated to 450 for 20 minutes.
