I have been eating lo carb for about a year. Here are my go-to Shabbos side dishes:

ratatouille- delicious hot Friday night and cold Shabbos lunch
veggie lasagna- basically slice zucchinni sideways and use them instead of lasagna noodles
crustless quiche- spinach, brocolli, mushroom or a combination
stir fried veggies with lots of fried onions
cauliflower dipped in egg and fried- deliciousness!!

Pretty much think non-starchy vegetables- corn and rice are very high in carbs. Hatzlacha rabah!

So we did ratatouille one week and roasted veggies the next and now shopping for another idea because while those were good nobody loved them enough to do it again so soon. Sigh.

I have one medium zucchini unless DH got my message and bought more, I don't know because he's not answering his phone. Have plenty of carrots, onions, tomatoes. Some peppers. Help?! Is there a kugel I can make out of that, one of the above posters seemed to have that kind of idea but I need a recipe because I am no good at improv.

sautee onions. boil the carrots and zucchini. drain and mash them once they are soft. mix with the onions, add salt pepper and garlic powder. beat 4 eggs in a 9x13 pan, add the mashed vegetable mix, mix well. add 1/4 cup of flour (whole wheat or regular.) bake covered for 1 hour on 350.

Baked sweet potato fries! Savory or sweet... Soon easy and delish. Much better than white potatoes or rice as far as nutrition is concerned

To the poster asking about tinned mushrooms:

I don't know if the kugel would taste as good. It might be too salty. I personally love sauteed mushrooms, so I don't mind the extra time it takes to cook.

I love sweet n' sour zucchini, dont have a recipe per se, but the basic ingredients are:
several zucchini (3-4 med zucchinis)
1 onion
1 8oz can tomato sauce
garlic powder
salt & pepper
brown sugar (about 1/4 c.--but can tweak if you want less carbs)
1 Tbsp lemon juice--more if you want it tangier

saute onion, In a 2qt pot or larger add tomato sauce, spices, sugar & lemon juice to sliced zucchini (coins) on a med flame. Sometimes I add water if I want more liquid sometimes it burns-- trying to figure out why.
You can alter the recipe to your taste.

I posted in a different thread of yours- quinoa!!!
It's the BEST carb substitute! High calorie but nutrient packed. You can put in almost any vegetable combination-grilled, roasted or sauteed. For extra flavor I will sometimes add brown sugar and soy sauce with the peppers, onions and carrot strips- like a stir-fry inspired quinoa.
