Kiddishes at shul (montreal) have this sweet kugel that has raisins, occasionally canned fruit in it. It is the texture that I am after. The noodles are thin. I have tried to rpelicate it, but with end results being a disaster. Please share your sweet noodle kugel recipes with me ( I have an amazing yerushaylim kugul, so no need for that). You didn't say what kind of a texture you're looking for; firm or soft.
This one isn't super firm, nor super soft -- it's in between. The basic recipe doesn't call for any fruit you can certainly add whatever you'd. This was given to me by a caterer and it is the best lokshen kugel I've ever tasted.
Gourmet Lokshen Kugel
Source: Ruth Lopin (Delectables Catering)
Kugel:
1 lb. noodles, cooked
½ cup sugar
4 eggs, beaten
1 cup Coffee Rich or Almond Milk (soy milk is okay too)
1 cup fruit juice (apricot nectar or apple juice) -- apricot nectar gives the best taste
Topping:
3 cups cornflakes, crushed (not cornflake crumbs)
½ stick margarine, melted.
1/2 cup sugar
1½ teaspoons cinnamon
Preheat oven to 350 degrees.
Combine kugel ingredients, put in Pam-sprayed 9 x 13 ( or two 8 x 8) inch baking dish. Combine topping ingredients and sprinkle on top. Bake at 350 degrees for about one hour. _________________ Want to lose weight fast? Want to keep it off easily?

I'm looking for a lokshen kugel to serve at my son's Bar Mitzvah lunch, and this sounds great. Do you know if it freezes well? I'm really bad with freezing things nicely, but I need to be able to cook ahead for this.

Yes, it freezes well. I've frozen it many times. Make sure to wrap it well and seal it.
