Lentil Burgers (yum!)
Quiche (low fat mozzarella)
zucchini cheese sticks
eggplant/cottage cheese lasagne
Quinoa (non dairy, non meat protein)

Will think of more and looking forward to other ideas too!

yum! can you please post recipes for the zuchini sticks, and the eggplant cottage cheese thing?

Ra mom posted a link for lemon pepper salmon that is really yummy. I usually add some fresh herbs on top- either dill or parsley. I plan to make it one night. If salmon is too fatty for you, it works on tilapia too (but salmon is better Wink )

last night I made an eggplant tomato sauce and had that with a can of tuna, some pasta, and some other grilled vegetables (pepper, broccoli, cauliflour, carrots) all mixed together.

Last night I grilled tilapia on a George Foreman. I just spread a bit of fat-free Italian dressing on it first. It was delicious.

black bean soup and quinoa
chick pea tacos with melted cheese on top
french fries (baked)) and salmon in the pressure cooker
pitas falafal and tehini spread all homemade...(I use the recipe from fresh and easy)..not low cal Sad
shakshuka!!!
fried rice (using eggs), greenbeans and red lentil soup
french toast...u can do it savory
sweet potatoes fries (baked)
mock tuna (from pennilessparenting) on toast with cucumber salad
tuna crochets
lomain using tofu and veggies

wow...getting hungry!

this was tonight's dinner for me (kids had baked ziti)

marinated grilled tofu sliced thinly (marinated with a little soy sauce, sesame oil, sweet chili sauce, crushed garlic)

zucchini strips steamed in place of noodles
tomato sauce with sauteed onions, scallions, mushrooms, spinach and peas

I put this in a different thread too.
This may seem weird, but it's really good and very filling. I eat them in a whole wheat sandwich.

DELICIOUS AND FILLING LENTIL BURGERS
1 c lentils (I use red)
4 c water
1 1/2 c oats
3/4 c salsa (I use medium but you can use mild if you want)
1 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper

Boil the lentils in water, drain. Mix everything else. Bake on 350. Enjoy!
I did the math once, and it 80 calories each if you make 15 patties.

For eggplant lasagne, I just slice the eggplant lengthwise, pour on some sauce and then cottage cheese. I love the cottage cheese texture. If you want you can sprinkle on shredded mozzarella cheese. Some people salt the eggplant first, but I don't.

Zucchini sticks- I don't have the actual recipe right now, but it's something like cut them into strips, put on shredded cheese and then sprinkle on breadcrumbs, bake on 400 for about 20 minutes. I can look for the actual recipe later.

Stir fry with toffu + brown rice
Been borritoes in whole wheat tortias
Baked fish with mashed regular and sweet potatoes

bean and cheese burritos in a whole wheat or corn tortilla, can add avocado.
spinach cheese casserole/or broccoli and cheese or quiches
tuna patties
portebello mushrooms. I'm going to grill them tonight which I have never done (with spinach and pepper)
Brown rice pasta
whole wheat vegetable lasagna
can use tortillas and make tortilla pizza
hard boiled, eggs. I'm going to have deviled eggs for lunch now.
Theres also a lot of soups and salads you can make...

I don't eat much fish so this is my ideas

If I have a can of lentils, do you know how that would approximate to your dried & boiled lentils?

burritos: use a whole wheat wrap. put in spanish rice, black beans, diced cucumber, tomato, avocado, sour cream (lowfat or fat free), hot sauce sprinkled on top..mmmmm

grilled tuna steaks: you can put any seasonings, lemon juice. I like to serve with steamed brocolli but you could do any veggie or salad

whole wheat veggie pizza with lowfat mozarella

baked tilapia or any other white fish like halibut or sea bass (more expensive). I put mango salsa on top after it is cooked. I like to serve with baked potato or sweet potato.

.....so many more yummy things.......
